2 loins of CORVINA REX FRESCAMAR of 150 grams approximately
200 grams of vegetables to taste (pepper, tomato, carrot, onion, bimi, mixed mushrooms …)
Virgin olive oil, salt and grinder pepper
The juice of a lime and its zest
175 ml of sunflower oil

Chop the vegetables, season and place in a baking dish.
Add the Corvina REX loins – previously seasoned – and a jet of olive oil and bake all the ingredients for 18 minutes at 200º c (with the preheated oven).
Prepare the mayonnaise by beating the egg next to the lime juice and a little sunflower oil, season and gradually add the rest of the oil.
Place the Corvina REX loins with the vegetables and serve the mayonnaise as an accompaniment crowned with the lime zest.
